The Joule Hotel, located in Downtown Dallas, is where Sarah and I go to feel transported to a more "metropolitan and sophisticated Dallas". The entire Main St. block, managed by 1530 Main, is impeccably designed with feels of London, Paris, and New York. We've lived in 'big' cities and sometimes (often) miss the sounds of bustling streets, bright lights, buzzing sidewalks, high-end window shopping — you know, the things that come with a metropolitan backdrop.... Thankfully, Dallas now hasThe Joule Hotel and the entire 1530 Main area.

Virtually every element of The Joule Hotel is a work of art. The artistic experience starts as soon as you walk in through the 1920's neo-gothic doors. Inside the hotel lobby you are met with dramatic art installations and luxurious and modern interior design. I should add, The Joule Hotel has some of the friendliest doormen we've ever encountered. As soon as you make your way to one of the 161 comfortable and chic rooms, you will never want to leave. Be sure to open the windows to check out the downtown views as well!

The Joule doesn't stop at incredible artistic features and gorgeous suites. It is host to two of Dallas' top notch restaurants: CBD Provisions and Americano. We frequent Americano, a lot.  Americano is the perfect place to impress a client for lunch, celebrate an occasion with friends, or double date with another couple. The casual Italian restaurant has a modern, colorful, and playful setting with some of the best pasta dishes and classic Negroni cocktails in Dallas! Since Sarah and I knew what to expect at Americano, we opted for dinner at CBD Provisions. We were blown away!  We didn't actually think it would stand up to Americano, but we were quickly proven wrong. They are uniquely different experiences but equally impressive! CBD is the moodier, Texan step-brother to it's Italian sister, Americano. CBD stands out with it's modern Texas brasserie-inspired menu focusing on local and whole ingredients. Don't be afraid to try their most acclaimed pig head carnitas or whole grilled fish dish! Everything we ordered from the menu was delicious.

Do not miss The Joule's room service! Breakfast in bed was unbeatable! Green juice, crispy applewood smoked bacon, goat cheese and egg white frittata, french press coffee, homemade granola and yogurt....

Where to start?!  Seriously, we love Dallas, but if/when you stay at The Joule Hotel, we urge you to stay put and immerse yourself in all that this hotel has to offer. Prior to founding WE THE BIRDS, her professional experience was in accounting/finance. After being diagnosed with Celiac Disease, she fell in love with French macarons (because they are a naturally, gluten-free dessert). She spent several years mastering the delicate art of making macarons and developing her own unique recipe. Natalie fancies herself more of a "foodie", than a baker. Nonetheless, she is the founder and creator of WE THE BIRDS | Macarons recipe and is known for creating innovative flavor profiles. In her role as Macaron Director, she leads the our team of talented bakers.
