After being diagnosed with gluten-intolerance, Natalie fell in love with French macarons because they are a naturally, gluten-free dessert. Obsessed with the challenge of making macarons, she spent several years mastering the delicate art and developing her own unique recipe. Natalie fancies herself more of a "foodie" and a cook rather than a baker... but macarons, unlike other baked goods, are a medium for flavor innovation. She loves to concoct new flavor combinations and is a bit of a "mad scientist" in the kitchen. She is the foundation of WE THE BIRDS Macarons and the reason our macarons are so tasty! In her role as Macaron Director, she leads our team of talented bakers & kitchen staff.
